Momma needs a little love too!

Today’s goal was to get ORGANIZED!  I’ve had a really wonderful holiday break but my body is very ready for good, yummy food.  I decided to try a few new recipes this week and am sharing below.  I loved the way they turned out!

Avocado Hummus QuesadillasIMG_4910

2 Larger avocados

2 tbsp Greek Yogurt

1 tbsp humus

1/4 pack ranch mix

1 tsp cumin

1 tsp pepper

Mash all ingredients in a bowl until you have a fairly smooth consistency.  I used whole grain tortillas and grilled until toasty.  It was so fast and easy!   My kids went for a bike ride with their dad and had a yummy, healthy snack ready for them when they got back.  I made double the recipe to use for tomorrow morning’s toast.  Just a little sprinkle of lemon juice to keep it’s bright green color.  I love avocados!  But doesn’t everyone??

4 Chicken skinless boneless chicken breast

2 tsp Paprika

1 tsp Sea salt

1 tsp cumin

1 tsp Crushed ground pepper

2 tsp Maple syrup, pure

I covered the chicken breast with spices and used a little olive oil to brown each side for a few minutes.  I layered in a baking dish and baked in the oven on 350 for 20-30 minutes.  (I also layered the bottom of the baking dish with 2 cups chicken stock)

Cilantro lime rice-

3 cups Jasmine rice

1/4 cup Cilantro

1/4 tsp Sea Salt

1 /4 cup lime juice

Cook rice as recommended- Bring water and rice to a boil, then cover on low for 20 minutes. Add all ingredients to water.

Green beans-

This is my momma has very little time but would like to eat yummy healthy food and needs a bit of help…whew!

1 pack Frozen green beans

1/4 Onion sliced

1 cup Mushrooms

1 tsp Salt

1 tsp Fresh ground pepper

1 tsp Garlic powder

1 long drizzle of Olive oil…oh yes I did.  I don’t measure the olive oil.  Just start drizzling!

Add to a skillet and cook until defrosted and heated.  And who-la!!  It’s one of my faves and I can’t wait it eat it.  I’m a pretty easy going meal prep person for lunch and snacks but I like dinner to have a little presentation!

After a long afternoon of meal prep and packing I am very much ready for my week.  Now that my food goals are organized and ready I am giving my self a few fitness goals as well!  My body likes to run but my mind loves it and needs the zen I get from it.  This week I am aiming to run 15 miles, get in 3 strength training workouts and 2 rest and recovery workouts of yoga, specific mobility work or a nice hike with my kids.  I’m pulling out my handy dandy planner and penciling all this in.  The reality is that it isn’t enough to have “good intentions”.  I’m a wife, mother, business owner and personal trainer.  There are waaay to many opportunities for me to find time for something else.  My schedule keeps me organized with all my life’s priorities and my health and wellness is definitely a priority! I make sure to make appointments for my self.  You know the old saying, “If momma ain’t happy, ain’t no one happy”.  This speaks volumes to me.  My husband is very much the head of our household.  He works very hard for us.  But I am well aware that I am the heart of this family.  I spend the most time with our children and my attitude shapes their day.  I read a quote the other day that I may repeat every day for the next 362 days.  This is what it said,

“A great attitude becomes a great day,

which becomes a great month,

which becomes a great year,

which becomes a great life”….in essence my gratitude shapes my attitude.

So, this momma needs a heart that’s filled with a great attitude and this happens when I focus on my health and wellness.  I owe it to my self and my family to make this a priority.  There is a balance to be found if you realize the parallels of what health AND wellness bring!

I’m sharing some of my ‪#‎fitfaves‬ today! I don’t leave for my ‪#‎runs‬ without them! My ‪#‎mizunowaveriders‬ are a life saver on both my long and short runs. The arch support is a life savor for my plantar fasciitis. (Along with core work, hip and abductor strengthening and ankle mobility work) Stop by and see Dave @corerunningcompany to find your perfect fit! My Under Armour fleece lined pants keep me warm on my runs. I’m a cold weather baby and these keep me running no matter the temperature. I use Carmex lip balm to save my lips from the cold and windy runs. And last but not least all my runs start with a ‪#‎rhodiola110‬  Pre-run  energy boost. I’m just getting back in to the swing of things with my running.  After many, many months off I am more than excited to get back at it!  Most days you’ll find me at Phoenix training with the TRX and Functional Fitness mixed modalities but running is my peace.  No music.  Just me, my breathing, my prayer and the road.  It’s so important to find what brings you peace.  More on that soon! My name is Raquel but my friends call me Rocky!  I am a wife to my very handsome husband and a proud momma to two handsome boys.  I’ve had it on my heart my whole life to share my passion for fitness.  My journey began in high school as a cheerleader and softball player.  Better movement drives my passion for fitness!  I trained outside of my sports to create healthy habits to perform and feel better.  After having both my boys I realized the importance of how a healthy view of fitness could empower me to reach goals I’d set on the back burner for years.  I found myself pushing my limits from Figure competitions, a beginning to a career as a fitness professional, a new business owner, a half marathon runner and a fitness mentor to new to the industry personal trainers. It was an amazing  7 years of education, growth,  set backs and personal and professional bests.  With a good few years of self reflection and prayer I realized my strong desire to set a better image of fitness.  I realized I needed to change my perspective from a fitness lifestyle to a movement lifestyle.  I don’t focus on the aesthetics of fitness but rather the positive effects of movement for health and wellness.  What a game changer!   My goal is to share what I’ve learned to help people move better, feel better, and look better…in that order!  What a relief it can be to stop focusing on the image of what fitness should look like and start focusing on what the body was made to do and make movement fun!  I’ll share my fitness adventures, life adventures, faith adventures and food adventures and I hope you’ll come along for the ride!
